Damurida and the Flavor of Historical Transformations in Roraima

Damurida or Tuma as the Macuxi call it is the daily food of the indigenous people who inhabit the northeast of the state of Roraima, the extreme north of the Brazilian Amazon. In recent years, damurida has gone beyond the indigenous village to become a dish with a flavor of regional identity. I argue in this essay that the damurida is at the center of the historical transformations in Roraima over the last 40 years. Until after the middle of the 20th century, the Macuxi delicacy was relegated by the regional elite as an offensive dish, a symbol of a so-called scarcity in the malocas of the lavrado and mountains. But damurida now occupies a prominent place in local cuisine, being served at parties and celebrations as a prominent regional dish, sophisticated in its use of local spices. Damurida does not remain unchanged, only changing its context; cooked in different environments, for different palates, the damurida changes its status and flavor.
